How to choose what to order on your first visit to a restaurant

A first visit to a restaurant has something special about it: everything is new and the menu can feel like a map without a legend. Over time I have built a small routine for choosing better, and I am sharing it in case it helps next time.

Start with the dish that defines the restaurant

Almost every restaurant has a dish that defines it. Sometimes it is highlighted on the menu; other times you notice it because it keeps appearing on the tables around you. Ordering it is the quickest way to understand what the kitchen is about.

Ask about the house specialty

The front-of-house team knows the kitchen better than anyone. Asking what they recommend, what is special today or which dish they personally love often opens options you would not have considered. It also turns the meal into a conversation.

Look for a different ingredient or technique

I like to choose at least one dish with something I do not know well: a seasonal ingredient, a technique, a sauce from another tradition. It is a way to step out of my comfort zone and learn something on every visit.

Pair a safe choice with a surprise

If you are with others, sharing is ideal. A familiar choice gives you a reference point to judge the kitchen; a surprise gives you the story you will tell afterwards. The balance between the two makes the experience complete.

Leave room for dessert

It seems like a detail, but dessert says a lot about a restaurant. It is the last memory you take with you, and many kitchens care about it as much as the main course.

Choosing well is not about getting everything right, but about ordering with curiosity. In the end, a first visit is also the perfect excuse to come back for what you did not get to try.
